Easy Guacamole Recipe

You can make this delicious and easy guacamole recipe just like they do in the Mexican restaurants without a whole lot of effort. You will WOW your family and friends and all it takes are a few inexpensive fresh ingredients and a sharp knife!
This recipe makes 3 cups of guacamole. You will need:
6 small ripe avocados OR 3 large Haas Avocados
1/4 cup finely chopped red onion
1/2 cup finely chopped fresh cilantro
2 packets of Concord Foods Authentic Guacamole Mix
2 medium limes
Step 1. Halve the avocados and scoop out the flesh into a bowl
Step 2. Add the packets of Avocado Mix to the bowl and avocado flesh
Step 3. Use a potato masher or fork to mash the avocado and mix until smooth or slightly chunky if you prefer
Step 4. Add the chopped red onion and cilantro and mix until combined
*I prefer to use way more cilantro than the 1/2 cup I list on the recipe. I decided 1/2 cup was a reasonable amount for anyone who likes cilantro but I do realize that not everyone LOVES it like I do. Use as much or as little as you like to suit your taste. Yes, I really do use the entire bunch when I make this recipe!*
Step 5. Add the fresh squeezed lime juice and stir
Limes aren’t seedy like lemons so I squeeze the cut halves directly into the bowl.
Step 6. (OPTIONAL) A few dashes of Louisiana Hot Sauce
This is the secret ingredient I use to give it that extra special “something” that no one can quite guess but everyone notices and loves.
You can serve this immediately but I prefer to allow it to sit at room temperature for at least 30 minutes. I hardly ever have leftovers but if you should have any at all then I recommend eating it the next day with tortilla chips for a healthy snack.
When avocados are on ridiculous clearance sales at my local grocery store, I make a huge batch of this guacamole and freeze it using my Food Saver Vacuum Sealer System.
I usually put between 1/4 and 1/2 cup servings in each freezer bag which is just enough for one individual serving. I also recommend placing a sheet of clear saran wrap on top of the dip to keep it from turning brown until you are ready to serve.
I will go ahead and confess that people who normally don’t even like guacamole will be kind enough to at least taste mine and then they start making requests for it at every function I am invited to. No joke!

Practical Couponing AND Recipe Tip: Back when I still had a 9-5 day job at a local hospital, our department held monthly potluck meetings all the time. I would get more requests for the bean dip than any other dish I ever made. That’s how the idea of freezing and stockpiling guacamole was born!
When the big huge gorgeous Haas Avocados go on sale at my local H-E-B store, I stock up and buy at 8 at a time. I will make at least 4 batches of this guacamole, all at once, in one big batch. This saves me time and money because time IS money.
I freeze the guacamole into one cup servings in my vacuum seal bags and I make sure to flatten them out as much as possible so they will take up less room in the freezer and they will take less time to thaw when I am ready to use it at a later date.
I ALWAYS label the bags with the contents and date it was sealed. This way I use up the oldest batch first because I will make more batches when I run low and another sale comes around.
